Simple Paleo Deviled Eggs

Sometimes I CRAVE eggs! And with good reason. Eggs are so nutritious and loaded with healthy fat and solid protein as well as vitamins and minerals. In addition to being a complete protein, eggs offer vitamin B12, selenium, and numerous antioxidants. This recipe is very fast and simple yet delicious and I bet you have all the ingredients in your kitchen already!

As we quickly approach football season, this could easily be a staple recipe for weekly football games! A perfect protein-filled, paleo snack.

INGREDIENTS – Makes 8 deviled eggs (feel free to double recipe ingredients!)

  • 4 whole eggs, boiled (or more, I used four so for this recipe plan accordingly)
  • 1/2 tbsp dijon mustard
  • 1 tbsp Paleo mayo (I like an avocado-oil based mayo such as Primal Kitchen)
  • Pink salt and pepper to taste (a pinch or so of each!)
  • 1/2 tsp dill
  • 1/4 tsp smoked paprika

METHOD

Boil your eggs. I place my eggs in a small pot covered just to the egg height with water and place over high heat with lid on. When the eggs start to boil, turn heat off immediately and let sit for 6-7 minutes. Then, rinse in cool or cold water and leave in the sink to chill. After about 5-6 more minutes you can peel the eggs and begin the deviled egg process.

Take a small bowl and gather your ingredients. Peel the eggs and gently cut in half and place on dish or other plate. Carefully scoop with a small spoon the yolk out of each half and place in the bowl. Mix the mayo, dijon, seasonings together with the egg yolks and mash well using a fork or spoon. Then scoop the mixture back into each egg half. Top with an extra sprinkling of pink salt if desired.
