Strawberry muffins (gluten free, refined sugar free, low carb)

I got in a baking mood today and we had a ton of strawberries I needed to find something to do with so I whipped up a muffin recipe using very simple ingredients! These are very low carb and just the right amount of sweetness and I bet you have all of the ingredients in your kitchen right now! These are about 8 grams of protein per muffin so if you are going to eat for breakfast I suggest pairing it with another source of protein such as scrambled eggs or something. You could also do these as a little sweet treat or snack during the day since they are very low carb.

STRAWBERRY MUFFIN INGREDIENTS

  • 1.5 cups almond meal
  • 1 scoop vanilla protein powder
  • 3 pastured eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • Dash of cinnamon
  • Dash of pink salt
  • 1 tbsp apple cider vinegar
  • 1/2 tsp baking soda
  • 1 cup chopped strawberries (blueberries would work also)
  • Coconut spray or olive oil cooking spray (without added propellant or preservatives)

METHOD

Blend all ingredients well in high-speed blender or food processor. Stir in the berries at the end. Carefully scoop or pour batter into a lightly greased muffin pan – should make about 10 muffins. Bake for about 20 minutes at 350 degrees. Enjoy!

**If you don’t use or have protein powder, simply do 2 full cups of almond flour as substitute
