Lemon Protein Waffle

I don’t know about you guys but I LOVE anything lemon! I will preface this post by saying the protein powder used may not be 100% “perfect”…but it is very close, and after using it I have found it works well with my body. I am slightly lactose intolerant, therefore I truly can’t do whey protein concentrate and need an isolate form of protein powder for use post-workout. Any of the high quality whey concentrates totally mess me up! The brand I have been using for my waffles is ASCENT – and to me this is a great product. If it’s not something you are interested in, that is fine! You can use something else if you prefer. It can be very hard to find a high quality protein product out there – and this one is very close to perfect.

Along with the Lemon Sorbet protein flavor, I add some lemon oil extract. It’s delicious!

INGREDIENTS – makes 2 waffles

  • 1 cup old fashioned oats
  • 1 banana
  • 3 whole eggs (again, I like pasture raised organic)
  • 1/4 cup water (just a little to get the right consistency)
  • 2 tbsp chia seeds
  • 1/2 tsp cinnamon
  • 1 scoop ASCENT lemon sorbet protein powder
  • 1/2 tsp lemon oil extract

METHOD

Get your waffle iron and plug it in. Take a high speed blender and put your eggs and water in first. Now add the remaining ingredients and blend well. Spray your waffle iron with a high quality coconut spray or olive oil spray (made without propellant – see picture below of my brand). Pour half the batter in the waffle maker and cook for 3 minutes. Remove the waffle. Spray the waffle iron again and make your second waffle.

Enjoy with pecans or almond butter and/or drizzle pure maple syrup (just a little will do).

  1. Yum, I am going to try this! I just recently found out that whey bothers my tummy and I have had to stop using it. I am going to try the kind you recommend! Keep up the posts, Kelly, I am a silent lurker (that sounds super creepy, but by that I mean I just read the posts and never comment). Super proud of you and you inspire me so much!!!
