I love oatmeal and I love berries and I LOVE leftovers! This dish has been perfected and it makes 6 perfect servings! It’s easy, simple, fast, and delicious! It is sure to be a crowd pleaser. I have posted another blog which is a double batch of this – so you can find that post here . However, I decided to share the smaller batch recipe for ease!
- 2 cups dry old fashioned oats
- 2 Scoops protein power of choice (I am currently using 1 scoop Vega Sport protein and 1 scoop Antler Farms Grassfed Whey)
- 1/3 cup pecans or walnuts
- 1.5 cups frozen berries
- 1/4 cup maple syrup
- 3/4 cup coconut milk + Splash of water
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
- dash of salt
Preheat oven to 400. Get a baking dish and grease with grassfed butter. Next take a large bowl and add your dry ingredients. Now take a small bowl and whisk your eggs. Add the maple syrup and vanilla to the eggs and stir well. Now add the wet ingredients to the dry, including the coconut milk and water. Stir well. Lastly, add the frozen berries and pour into a small glass baking dish. Bake for about 30 minutes or until the center is firm.
Allow to rest for 5 minutes before serving.
