Berry baked oatmeal

I love oatmeal and I love berries and I LOVE leftovers! This dish has been perfected and it makes 6 perfect servings! It’s easy, simple, fast, and delicious! It is sure to be a crowd pleaser. I have posted another blog which is a double batch of this – so you can find that post here . However, I decided to share the smaller batch recipe for ease!

INGREDIENTS

  • 2 cups dry old fashioned oats
  • 1 scoop vanilla protein powder – currently finishing up Garden of Life Vanilla 
  • 1/3 cup pecans or walnuts
  • 1.5 cups frozen berries
  • 1/4 cup maple syrup
  • 3/4 cup coconut milk + Splash of water
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • dash of salt

METHOD

Preheat oven to 375. Get a baking dish and grease with grassfed butter. Next take a large bowl and add your dry ingredients. Now take a small bowl and whisk your eggs. Add the maple syrup and vanilla to the eggs and stir well. Now add the wet ingredients to the dry, including the coconut milk and water. Stir well. Lastly, add the frozen berries and pour into a small glass baking dish. Bake for 30 minutes or until the center is firm.

Allow to rest for 5 minutes before serving.

Enjoy with a dollop of organic plain yogurt. My favorite brands are Seven Star Farms as well as Siggi’s!
