Berry baked oatmeal

I love oatmeal and I love berries and I LOVE leftovers! This dish has been perfected and it makes 6 perfect servings! It’s easy, simple, fast, and delicious! It is sure to be a crowd pleaser. I have posted another blog which is a double batch of this – so you can find that post here . However, I decided to share the smaller batch recipe for ease!

INGREDIENTS

  • 2 cups dry old fashioned oats
  • 1 scoop vanilla protein power of choice
  • 1/2 cup raw pecans
  • 1.5 cups frozen berries
  • 1/4 cup maple syrup
  • 3/4 cup lite coconut milk + Splash of water
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • dash of salt

METHOD

Preheat oven to 375. Get a medium glass baking dish and grease with grassfed butter. Next take a large bowl and add all of your dry ingredients. In a smaller bowl whisk your egg with the maple syrup, vanilla, and coconut milk. Add the wet ingredients to the dry, including the extra water if needed and mix well. Lastly, add the frozen berries and then pour into a medium glass baking dish. Bake for about 30-35 minutes or until the center comes clean with toothpick.

Allow to rest for 5 minutes before serving.

Enjoy with or without a dollop of plain yogurt.
