Pizza Frittata

I LOVE fritattas because they are super healthy, easy and you can make them unique and diverse. I also love eggs. I love pizza. So this recipe combines multiple loves!

I got the idea while browsing recipes yesterday online and this definitely sounded amazing so I took it and made it completely unique to me!

INGREDIENTS:

  • 5 egg preferably pasture raised organic
  • handful fresh chopped basil
  • 1/3 cup organic pizza sauce
  • 1 red bell pepper, chopped
  • Handful fresh spinach
  • About 3/4 cup chopped mushrooms
  • Uncured pepperoni slices or chorizo (see images below)
  • Olive oil, for sautรฉing
  • Red pepper flakes
  • Salt
  • Pepper

METHOD:

Preheat oven to 400 degrees. Take a cast iron skillet and pour some oil in it and sautรฉ your bell pepper and mushrooms about 5 minutes over medium heat.

Meanwhile, whisk the eggs with the pizza sauce, basil, salt, pepper and red pepper flakes (as much or little as you want).

Add the spinach to the cast iron pan and stir for just a minute or two before adding the egg mixture and turn off the stove. Place the cast iron pan in the oven and bake for about 18 minutes until the center is firm.

Serves 2-3. (In our case, 2, since I had 2 workouts today and burned almost 1K cals LOL). I also made huge arugula salad with lemon and olive oil and piled that on the plate next to my pizza frittata! I will be making this again ASAP! So yummy!
