Protein Waffle

Tasty, balanced delicious. This waffle is fluffy and filling and satisfying – loaded with protein and feels like an indulgence although it’s completely healthy AND gluten free friendly!

INGREDIENTS FOR TWO WAFFLES! 2 breakfast servings.

  • 3 whole eggs
  • 1 banana (if it’s a huge banana you could do 1/2)
  • 1 cup old fashioned oats
  • 1 scoop vanilla whey protein powder
  • about 1/4 cup plain yogurt of choice (a dollop or so)
  • 1 tsp cinnamon
  • 1/2 tsp baking powder

METHOD

Get a waffle maker! Plug it in. Spray with coconut or olive oil spray.

Gather your ingredients – add the eggs, yogurt, liquid ingredients first to the blender. Then the dry. Blend on high. Take off the lid and scrape sides to ensure everything is blended well. Blend again.

When iron is hot pour about 1/2 the batter into waffle maker – but careful not to overflow. You may end up with 2-2.5 waffles just depends on how runny your batter is. Cook 3 mins and remove. Spray waffle maker before each waffle! Repeat until batter is used.

Enjoy topped with pure maple syrup or pecans or raw walnuts or even almond butter or grassfed butter. Also delish when you add fresh blueberries or strawberries.
