Mmmmmmm this is so good, easy, and very low carb. Minimal ingredients and minimal prep time. Let’s get right to it…
Ingredients:
- 2 chicken breasts, cubed
- 1/2 can full fat coconut milk
- 1/2 head cauliflower, riced (use a cheese grater)
- Cinnamon, chili powder, paprika, curry, garlic powder, cayenne pepper (optional), sea salt, pepper, all to taste (I don’t measure..I just add them! Heavy on cinnamon lighter on the chili powder and cayenne, though)
Method:
Heat some coconut oil in a large skillet – I used a large cast iron. Add your spices and smell the fragrance. Then add your chicken and mix it with the spices. Add more if necessary. Brown the chicken over medium high heat for about 5-6 minutes. Then add the coconut milk and cauliflower and mix well. Bring to boil and then reduce to low and simmer for about 12 minutes.
Serves 2. Enjoy this with extra veggies on the side, or, you can even serve it over jasmine rice!
