Dark Chocolate Almond Butter Eggs – healthy “Reese’s”

These are PERFECTION!! I know Easter has passed, but, I made these on Easter as opposed to eating the complete processed garbage that is a Reese’s egg. You should do the same from now on. Never indulge in a processed, crappy treat when you can make these that actually have some nutritional content!

Ingredients:

  • 1/2 c almond butter (or organic peanut butter)
  • 1.5 tbsp coconut flour
  • 2 tbsp maple syrup
  • 1/2 tbsp coconut oil
  • 1/2 c dark chocolate chips
  • sea salt, shredded unsweetened coconut, for dusting

Method:

Mix the nut butter, coconut flour, maple syrup in a bowl and form into balls or egg shapes. Place on a wax paper lined pan and put in the freezer for twenty minutes. Meanwhile, melt the coconut oil and chocolate over low heat. Then take the balls/eggs from the freezer and dip each one in the melted chocolate and place back on the wax paper, lightly dusting with sea salt and coconut flakes. Continue this process until finished.

HOW EASY WAS THAT!? Store these in the fridge before enjoying.
