Bacon Chocolate Chip Cookies – gluten free

Oh my gosh I love bacon. And I love a good “paleo” dessert aka CLEAN. This dessert will surely satisfy a sweet tooth with zero guilt. Here’s how you do it:

Ingredients:

  • 1/2 c coconut flour
  • 1/2 c dark chocolate chips
  • 2 eggs
  • 1/3 c melted coconut oil (not hot!)
  • 1/4 c pure maple syrup OR organic coconut palm sugar
  • 4 pieces cooked bacon, chopped
  • 1 teaspoon pure vanilla
  • sea salt

Preheat oven to 350. Mix wet ingredients together in a bowl, whisking the coconut oil well with the eggs. Put all your dry ingredients, except the bacon and chocolate chips, in a bowl and stir. Then add the wet ingredients to the dry and mix well. Lastly, add your chopped bacon pieces and dark chocolate chips. Form into 12 little balls with your hands and place on a greased baking sheet, or line a baking sheet with aluminum foil, and bake for about 22 minutes. Makes 12 cookies.
