This is about as close to eating a french fry that I’ll get. These are a delicious treat – good for a high carb day. Be sure to always buy organic white potatoes (this includes new) as they’re heavily sprayed with pesticides.
- 4-6 organic new potatoes (small to medium sizes)
- Italian seasoning (Rosemary, sage, oregano, etc)
- grassfed butter & coconut oil (about 1/2-1 tablespoon each)
- sea salt + pepper
Preheat oven to 450. Rinse and dry your potatoes and cut them into little cubes. Melt the coconut oil and butter and drizzle on top of the potatoes. Sprinkle sea salt, pepper and Italian seasoning and mix/toss them well. Ensure that everything is evenly coated.
Roast for about 40 mins, toss once halfway. Keep an eye on them to make sure they don’t burn as all ovens differ. Turn down temp if needed to ~420!
