I was going to make meatballs with these same ingredients but decided a meatloaf was way easier. So here’s my creation of yumminess!
- 1 lb grassfed beef
- 1 lb Italian sausage
- 1 head cauliflower, riced or chopped well
- 1/2 onion, diced
- 3 cloves garlic, minced
- 1 6 oz can or jar of organic tomato paste
- 2 eggs
- 1/2 tsp sea salt
- Pepper to taste
- 1 tsp basil
- 1 tsp oregano
- 1/2 tsp smoked paprika
Preheat oven to 400. Butter a large glass baking dish. Mix everything well in a large bowl, using hands to get it all incorporated. Bake for 45-50 mins.
Let cool and drizzle with BBQ sauce.
Serves 8-10. I recommend eating with a large side of steamed broccoli!
