I love grassfed beef. And I love chorizo. And sweet potatoes. And Mexican spices! So this is a hodgepodge of that and it’s not only super nutritious but super easy and delicious!!
serves 8-10.
ingredients:
- 1 lb grassfed beef
- 1 lb chorizo sausage
- 1 onion
- 1 cauliflower
- 1 bell pepper
- 3 cloves garlic
- 2 teaspoons chili powder, 2 teaspoons, paprika, 1/2 tsp or less cayenne, 2 teaspoon cumin, 1 tsp salt, dash of pepper
- coconut oil or grassfed butter, for cooking oil
- 6 sweet potatoes, rinsed peeled and chopped (follow my recipe here)
Method:
sautΓ© your garlic and onion in the coconut oil or butter for a few minutes in a large cast iron skillet over medium high heat. Add your meat and cook down a few minutes longer. Add your spices and mix well. While this is browning, dice your bell pepper and add to the pan. Next, take your rinsed cauliflower and using a cheese grater “rice” the cauliflower into the pan. Mix everything well and cook long enough to brown the meat.
Serve with sweet potato wedge fries and another steamed veggie of choice (I’m using broccoli). Enjoy!!
