I bet these sound sinful to you right? Well they are not as bad as you think! These chocolate “caramels” (as I call them) don’t even have caramel or any processed sugar (or added sugar for that matter)! But they taste like caramel! Here’s how you make these amazing bites of heaven! Try not to eat too many!
ingredients:
- 20 pitted dates
- 1/3 c high quality dark chocolate (I use 365 brand from whole foods)
- sea salt
method:
Soak the dates in a bowl of HOT water for 30 mins. Prep a baking sheet with some wax paper. After the dates are finished soaking, drain the water and either blend the dates in a blender or place in a food processor and blend until smooth (you may need to add one tablespoon of water at this point, and keep blending). Next, take the date mixture and form into small balls (about 14-16). Set on the baking sheet and place in freezer for 30 mins to set.
It’s OK if they look a little chunky like the above!
Now melt the chocolate on the stove on low. Take the dates from the freezer and dip each one in the chocolate and set back on the baking sheet. Sprinkle each with sea salt immediately. Then place back in freezer for 20-30 mins to set. Store in freezer.
**note: medjool dates won’t need to soak as long as they’re already very soft! Perhaps 5-10 minutes.
