This is by far one of my favorite things to make. Everyone (well, except vegans and vegetarians) LOVES bacon. Bacon is totally a part of my paleo primal lifestyle as long as it’s “uncured” (no nitrates or other crazy chemicals). I definitely enjoy these angels once a month at most…but probably just a handful of times per year.
You can stuff the dates with goat cheese or cream cheese, just try to find organic or raw if possible. OR you can just wrap the bacon around the date by itself. All tasty options. You can also make these with medjool dates (SO large and juicy) or regular dates (still tasty but medjool are the most delicious).Β
INGREDIENTS (for 10 bacon wrapped dates)
- 5 medjool dates – torn in half and pit removed
- small 4 oz block of goat cheese
- 5 pieces of bacon, cut in half (nitrate free/uncured)
- 10 toothpicks
METHOD
Preheat the oven to 415. Put your raw bacon slices on a plate and cover with paper towel and microwave to pre-cook for 2 minutes. Let cool. Take your medjool dates and stuff a little bit of goat cheese (size of nickel) in each one. Once bacon is cool enough to touch, take each piece and wrap around the date and secure with toothpick. Place on baking sheet and cook for about 15 minutes until bacon appears slightly browned.
